Our Dairy Free Cookie Recipe
Let’s get prepped! Find our list of yummy ingredients below. You may already have these in your cupboards!
You will need the following ingredients:
- Dairy-Free margarine spread of your choice
- 160 grams of coconut sugar
- 1 large egg (or vegan option)
- 125 grams of self-raising flour
- 25 grams of cocoa powder
- 1/2 tsp of bicarbonate of soda
- 1/2 tsp of baking powder
- 1 tsp vanilla extract
- 100 grams dairy-free PlayinChoc chocolate of your choice. We love the m•lk!
First things first, the oven needs to be set at a toasty 190C, 170C fan or gas mark 5. Make sure little fingers aren’t in the way during this part!
Next, you want to make sure that you’ve got the correct amount of ingredients before you start mixing. You can do this by measuring and weighing out your ingredients with your children, either using traditional or electric kitchen scales.
A great way to allow your children to be more involved in the kitchen in a safe but exciting way is through whisking. Get them to whisk the dry ingredients together in a large mixing bowl. This can then be set aside for later. Dry ingredients include self-raising flour, cocoa powder, bi-carbonate of soda and baking powder.
Then it’s time to mix the wet ingredients! Combine sugar, dairy-free margarine and then slowly whisk in the large egg (or the alternative) and vanilla extract into the bowl, until the mixture is light and fluffy.
Combine both the dry and wet mixtures, folding them into one another until a doughy consistency is achieved. It’s now chocolate time! Break the 100 grams of PlayinChoc m•lk chocolate or dark chocolate (whatever your preference!) into chunks and stir them into the dough.
Next, you’ll want to sprinkle some flour on your kitchen surface or chopping board and roll the dough out with a rolling pin until it’s nice and flat.
Since these cookies are filled with tasty chocolate chips, it’s best to choose a simple cookie cutter shape. We’d recommend opting for a pumpkin, coffin, ghost or moon shape to get into the spirit of Halloween! Once you’ve decided on the cutters, encourage your children to press them firmly into the dough to create some seriously spooky shapes.
If you don’t have any cutters to hand, then don’t worry, they’ll be just as yummy! You simply need to spoon the mixture into small scoops and roll them into little balls, ready to be placed on the baking tray.
Remember to line your baking tray with parchment paper, so the dough doesn’t get stuck. Also, make sure that your cookies are spaced out evenly, so they have room to rise and take shape.
These can then be popped into the oven to cook for around 15 minutes. Once the cookies are a lovely golden brown and the chocolate is wonderfully gooey, remove these from the oven and place the try on the side for two to three minutes.
Finally, transfer your cookies onto a wire rack and let them cool, ready to be eaten!
